Baked salsify with blue cheese

2 tablespoons of vinegar, for example, herbal vinegar
700 g of salsify
6 tablespoons of rapeseed oil
salt
50 g of nut mixture
3 tablespoons of butter
3 tablespoons of panko
2 teaspoons of pink pepper
30 g of watercress

Prepare a bowl with plenty of water and vinegar. Peel the salsify roots under running water and immediately put them in the bowl with the acidulated water. Preheat the oven to 200 ° C. Take the roots out of the water and let them drain well. Halve or quarter the largest roots, leave the thinnest whole. Mix everything with the oil and salt. Arrange the salsify on a baking tray lined with parchment paper and bake in the centre of the oven for approx. 25 minutes.
Meanwhile, coarsely chop the mixed nuts. Melt the butter in a pan. Mix the walnuts with the panko and butter, spread the mixture over the roots and bake for another 8 minutes. Remove from the oven, arrange the salsify on plates and garnish with pepper and watercress. Cut the cheese into cubes, distribute them on plates and serve.
